Description

This Creamy Bow Tie Pasta Salad is the perfect summer side dish made with bow tie pasta, fresh vegetables, cheddar cheese, and a tangy-sweet dressing. Easy to make, customizable, and perfect for BBQs, potlucks, or meal prep.


Ingredients

1 lb bow tie pasta

1 cup mayonnaise

1/2 cup sour cream

2 tbsp apple cider vinegar

1 tbsp sugar

1/2 tsp salt

1/4 tsp black pepper

1/2 red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup shredded cheddar cheese

2 tbsp fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil and cook the bow tie pasta until al dente. Drain and rinse with cold water. Let cool completely.

2. In a large mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth.

3. Add the cooled pasta to the bowl along with red onion, cherry tomatoes, cucumber, shredded cheddar, and chopped parsley.

4. Toss gently until everything is coated evenly in the dressing.

5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.

Notes

Creamy pasta salads are best when chilled before serving.

You can swap sour cream for Greek yogurt for a lighter version.

Add grilled chicken or bacon for extra protein if desired.
