Ideal for make-ahead entertaining, this cranberry cheese log is also gluten-free and full of flavor.

Ingredients

8 oz cream cheese

4 oz goat cheese

⅓ cup dried cranberries, chopped

⅓ cup shelled pistachios, chopped

1 tablespoon honey

1 teaspoon orange zest

Pinch of salt

Instructions

1. In a bowl, blend the cream cheese and goat cheese until smooth.

2. Mix in the honey, orange zest, and salt.

3. Place the cheese mixture on plastic wrap and form into a log. Refrigerate for 1 hour.

4. Spread the chopped cranberries and pistachios on a plate. Roll the cheese log over the mixture to coat.

5. Serve immediately or refrigerate until ready. Let sit at room temp 10–15 minutes before serving.

Try swapping pistachios with pecans or walnuts for a different flavor twist.
