Description

Cranberry Orange Bread is a moist, tender quick bread packed with tart cranberries, fresh orange zest, and bright citrus flavor, then finished with a simple orange glaze for an easy homemade loaf that is perfect for breakfast, brunch, holiday baking, or an afternoon snack.


Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup granulated sugar

2 large eggs

1/2 cup unsalted butter, melted

1 tablespoon orange zest

1/2 cup fresh orange juice

1/2 cup milk

1 teaspoon vanilla extract

1 1/2 cups fresh cranberries, halved

1 cup powdered sugar

2 to 3 tablespoons fresh orange juice for glaze


Instructions

1. Preheat the oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, whisk together the sugar, eggs, melted butter, orange zest, orange juice, milk, and vanilla extract until smooth.

4. Add the dry ingredients to the wet ingredients and stir just until combined.

5. Fold in the cranberries gently so they are evenly distributed through the batter.

6. Pour the batter into the prepared loaf pan and smooth the top.

7. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.

8. Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.

9. Whisk the powdered sugar with 2 to 3 tablespoons of orange juice until smooth.

10. Drizzle the glaze over the cooled bread, let it set, then slice and serve.

Notes

Use fresh orange zest for the best citrus flavor since it gives the loaf a brighter and more fragrant finish than bottled flavoring.

Tossing the cranberries lightly in a spoonful of flour can help keep them from sinking in the batter.

Let the loaf cool completely before glazing so the orange glaze stays on top instead of melting into the bread.
