Ingredients
4 boneless skinless chicken breasts
8 oz brie cheese, sliced
1 cup whole berry cranberry sauce
2 tbsp olive oil
1 tsp fresh rosemary, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Slice a deep pocket into each chicken breast, being careful not to cut all the way through. Season inside and out with salt and pepper.
2. Stuff each pocket with brie slices and cranberry sauce. Press to close and secure with toothpicks if needed.
3. Heat olive oil in a skillet over medium-high heat. Sear each chicken breast for 2–3 minutes per side until golden brown.
4. Transfer seared chicken to a baking dish, sprinkle with rosemary, and bake at 375°F (190°C) for 20–25 minutes or until internal temperature reaches 165°F (75°C).
5. Let rest for a few minutes before serving. Spoon over melted cheese and cranberry juices from the dish.
