Ingredients

2 tablespoons butter

1 tablespoon olive oil

2 shallots, finely chopped

2 cloves garlic, minced

2 stalks celery, diced

2 tablespoons tomato paste

2 tablespoons all-purpose flour

3 cups seafood or chicken broth

1 cup dry white wine

1 bay leaf

1 teaspoon Old Bay seasoning

1/2 teaspoon paprika

1 cup heavy cream

1 cup cooked shrimp, chopped

1 cup lump crab meat

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped


Instructions

1. Melt butter and olive oil in a large pot over medium heat. Add shallots, garlic, and celery, and cook until softened.

2. Stir in tomato paste and cook for 1 minute. Add flour and stir to coat the vegetables.

3. Slowly pour in broth and wine, stirring continuously. Add bay leaf, Old Bay seasoning, and paprika. Simmer for 15 minutes.

4. Remove bay leaf and blend the soup using an immersion blender or transfer to a blender in batches until smooth.

5. Reduce heat, add heavy cream, cooked shrimp, and crab meat. Stir and let warm for 5 minutes.

6. Season with salt and black pepper.

7. Serve hot, garnished with parsley and a side of toasted bread.

Notes

Make sure seafood is thawed and patted dry if using frozen.

Avoid boiling the soup after adding cream to preserve texture.

Use wild-caught seafood for best flavor.
