Description
Cowboy Scampi is a bold twist on shrimp scampi, blending buttery garlic shrimp with Cajun seasoning, peppers, and a touch of lime. This easy, 30-minute dinner is packed with flavor and perfect for serving with pasta, bread, or rice. A cowboy-style seafood recipe the whole family will love.
Ingredients
1 lb shrimp, peeled and deveined
3 tbsp butter
4 cloves garlic, minced
2 tsp Cajun seasoning
1 tsp red chili flakes
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 small red onion, thinly sliced
2 tbsp fresh lime juice
2 tbsp chopped parsley
2 tbsp olive oil
8 oz cooked pasta or crusty bread, for serving
Instructions
1. Peel and devein the shrimp if needed. Slice bell peppers and red onion. Mince garlic.
2. In a large skillet, heat olive oil over medium-high. Sauté peppers and onion for 5–7 minutes until softened and slightly charred.
3. Add garlic and shrimp. Stir in Cajun seasoning and chili flakes. Cook until shrimp turn pink, about 3–4 minutes.
4. Add butter and lime juice. Stir to coat shrimp and veggies in the sauce. Let simmer 1–2 minutes.
5. Sprinkle with parsley and serve hot over pasta or bread.
Notes
Use tail-off shrimp for easier eating.
Don’t overcook the shrimp; they cook fast.
Adjust chili flakes based on your heat preference.
