Description

Ingredients

1.5 pounds boneless, skinless chicken thighs

1/2 cup unsalted butter

4 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes

2 tablespoons fresh parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

8 skewers (wooden or metal)


Instructions

1. Melt butter in a saucepan over medium heat. Add garlic and cook until fragrant. Remove from heat and stir in lemon juice, Dijon mustard, smoked paprika, red pepper flakes, parsley, salt, and pepper.

2. Cut chicken into bite-sized chunks and place in a bowl. Pour two-thirds of the cowboy butter over the chicken and mix to coat. Cover and marinate in the fridge for 30 minutes to 2 hours.

3. Thread chicken onto skewers. Preheat grill to medium-high heat.

4. Grill skewers for 10-12 minutes, turning occasionally, until cooked through and lightly charred.

5. Brush remaining cowboy butter over skewers just before serving. Garnish with extra parsley and a squeeze of lemon.

Notes

Let chicken marinate for at least 30 minutes for the best flavor.

Use metal skewers or soak wooden ones for 30 minutes before grilling.

Adjust spice level by increasing or decreasing red pepper flakes.
