Description

Cowboy Butter Chicken Linguine is a bold and creamy pasta recipe made with garlicky cowboy butter, juicy chicken, fresh herbs, and a zesty kick of lemon and Dijon. Perfect for an easy chicken pasta dinner with tons of flavor and comfort.


Ingredients

400g linguine

500g boneless, skinless chicken breasts or thighs

4 tablespoons butter

4 cloves garlic, minced

1 tablespoon lemon zest

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 teaspoon red pepper flakes

1 teaspoon smoked paprika

2 tablespoons chopped fresh parsley

1 tablespoon chopped chives

Salt and pepper, to taste


Instructions

1. Bring a large pot of salted water to a boil and cook the linguine according to package directions. Reserve 1/2 cup of pasta water, then drain.

2. Season the chicken with salt, pepper, and paprika. Heat a bit of oil or butter in a skillet over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.

3. In the same skillet, melt the butter. Add garlic and sauté until fragrant, about 30 seconds.

4. Stir in the lemon juice, zest, Dijon mustard, red pepper flakes, and smoked paprika. Simmer for a couple of minutes.

5. Slice the cooked chicken and return to the pan. Add the drained pasta and toss to coat in the cowboy butter.

6. Add a splash of reserved pasta water to loosen the sauce if needed.

7. Turn off the heat, stir in parsley and chives. Adjust seasoning to taste. Serve warm.

Notes

This dish is customizable—swap chicken with shrimp or use your favorite pasta.

Don’t skip the fresh herbs—they lift the flavor of the rich butter sauce.

A splash of pasta water works wonders for perfecting the sauce consistency.
