Description

These crispy and fluffy cornbread waffles are perfect for any meal of the day. Made with cornmeal, buttermilk, and pantry staples, they’re the ultimate comfort food. Serve sweet or savory. A Southern-style twist on classic waffles that everyone will love.

Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

0.5 teaspoon salt

1 tablespoon sugar

1.5 cups buttermilk

2 large eggs

0.25 cup melted butter

Instructions

1. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.

2. In another bowl, beat the eggs, then mix in the buttermilk and melted butter until smooth.

3. Pour wet ingredients into the dry mix and stir gently until just combined. Let sit for 5 minutes.

4. Preheat and grease your waffle iron.

5. Add about 0.5 to 0.75 cup of batter per waffle and cook until golden brown and crisp.

6. Serve hot with your favorite toppings.

Notes

Let the batter rest for 5 minutes to hydrate.

Use medium-grind cornmeal for the best texture.

Freeze leftovers and reheat in the toaster to keep them crisp.
