Ingredients
1 container (8 oz) Cool Whip
1 can (20 oz) crushed pineapple in juice
1 package (3.4 oz) instant vanilla pudding mix
2 cups mini marshmallows
0.5 cup chopped pecans (optional)
Instructions
1. In a large bowl, combine the crushed pineapple (with juice) and vanilla pudding mix. Stir until the pudding dissolves and the mixture begins to thicken.
2. Gently fold in the Cool Whip until fully combined and fluffy.
3. Stir in the mini marshmallows and chopped pecans until evenly mixed.
4. Chill in the refrigerator for at least 1 hour before serving.
Notes
Make sure the pineapple is canned with juice, not syrup.
You can prep this a day ahead — it gets even tastier after chilling overnight.
Swap pecans with walnuts or leave them out for a nut-free version.
