Description

This cool and creamy macaroni salad is the best comfort food to enjoy in your pajamas. Perfect for potlucks, make-ahead lunches, or cozy nights in, this easy creamy pasta salad blends tangy dressing, crunchy veggies, and soft pasta for a nostalgic bite every time.


Ingredients

2 cups elbow macaroni

1 cup mayonnaise

1/2 cup sour cream

2 tablespoons apple cider vinegar

1 tablespoon sugar

1 tablespoon Dijon mustard

1/2 cup celery, chopped

1/4 cup red onion, finely diced

1/3 cup shredded carrots

1/2 teaspoon salt

1/4 teaspoon black pepper

3 hard-boiled eggs, chopped


Instructions

1. Cook the elbow macaroni until al dente, then drain and rinse under cold water. Let it cool completely.

2. In a large bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, and Dijon mustard. Season with salt and pepper.

3. Add the cooled macaroni to the bowl and fold in chopped celery, red onion, and shredded carrots.

4. Gently fold in the chopped hard-boiled eggs.

5. Cover and refrigerate for at least 1 hour before serving.

Notes

Let the pasta cool completely before mixing to avoid melting the creamy base.

You can prep this up to 2 days in advanceβ€”it gets better with time.

Add more mayo if the mixture thickens after chilling.
