Description

Ingredients
1 lb chicken breasts
2 carrots, sliced
2 celery stalks, sliced
1 medium onion, diced
3 garlic cloves, minced
3 tbsp butter
3 tbsp all-purpose flour
6 cups chicken broth
1 cup heavy cream
3 cups egg noodles
1 bay leaf
1 tsp dried thyme
Salt and pepper to taste
2 tbsp chopped parsley
Instructions
1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5–7 minutes.
2. Stir in garlic and cook for 1 more minute until fragrant.
3. Sprinkle flour over the vegetables, stir to coat evenly, and cook for 1 minute.
4. Gradually whisk in chicken broth to prevent lumps. Add bay leaf and thyme.
5. Add chicken breasts. Bring to a gentle boil, reduce heat, cover, and simmer for 15–20 minutes until chicken is cooked through.
6. Remove chicken, shred it, and return it to the pot.
7. Stir in egg noodles and cook for 8–10 minutes or until tender.
8. Pour in heavy cream and stir well. Season with salt and pepper.
9. Finish with chopped parsley. Remove bay leaf and serve warm.
Notes
Use rotisserie chicken to save time.
If soup thickens too much, add extra broth when reheating.
Add spinach or peas for extra veggies and color.
