Description

Classic Nanaimo Bars are a no-bake Canadian dessert made with a chocolate-coconut base, creamy custard filling, and a rich chocolate topping. Perfect for holidays, parties, or a sweet indulgence at home.


Ingredients

0.5 cup unsalted butter

0.25 cup granulated sugar

0.25 cup cocoa powder

1 large egg, beaten

1.75 cups graham cracker crumbs

1 cup shredded sweetened coconut

0.5 cup chopped walnuts (optional)

0.5 cup unsalted butter (for filling)

2 tablespoons vanilla custard powder

2 tablespoons heavy cream

2 cups powdered sugar

4 ounces semi-sweet chocolate

2 tablespoons unsalted butter (for topping)


Instructions

1. Melt 0.5 cup butter, 0.25 cup sugar, and 0.25 cup cocoa powder in a saucepan over low heat. Stir constantly until melted.

2. Whisk in the beaten egg and cook until the mixture thickens. Remove from heat.

3. Stir in graham cracker crumbs, shredded coconut, and chopped walnuts.

4. Press the base mixture into a parchment-lined 8Ă—8 inch pan. Chill to set.

5. In a bowl, beat together 0.5 cup butter, custard powder, heavy cream, and powdered sugar until fluffy.

6. Spread the custard filling evenly over the chilled base and return to the refrigerator.

7. Melt semi-sweet chocolate with 2 tablespoons butter until smooth. Let cool slightly.

8. Pour chocolate topping over custard layer and spread evenly. Chill until fully set.

9. Use a hot knife to slice cleanly through the bars. Serve chilled or at room temperature.

Notes

Keep bars chilled for clean slicing.

You can freeze these for up to 3 months.

For a nut-free version, simply skip the walnuts.
