Description

This Classic French Potato Leek Soup is a creamy and comforting recipe featuring Yukon Gold potatoes, leeks, garlic, and a touch of cream. Perfect for cozy dinners, it’s a traditional French soup that’s easy, elegant, and budget-friendly.


Ingredients

3 large leeks

4 medium Yukon Gold or Russet potatoes

3 tablespoons butter

2 cloves garlic

5 cups vegetable broth

1 cup heavy cream

1 teaspoon salt

1⁄2 teaspoon black pepper


Instructions

1. Slice off dark green tops and roots of leeks. Halve lengthwise, rinse, and slice into thin half-moons.

2. In a large pot, melt butter over medium heat. Add leeks and cook until soft, about 8 minutes. Add garlic and cook 1 more minute.

3. Add diced potatoes and broth. Bring to a boil, reduce heat, and simmer 20 minutes or until potatoes are tender.

4. Blend soup using immersion blender or in batches with countertop blender until smooth.

5. Stir in cream, season with salt and pepper, and warm through. Serve with garnish of choice.

Notes

Use Yukon Gold potatoes for a creamier texture.

If freezing, omit the cream and add it when reheating.

Thoroughly clean leeks to remove hidden dirt.
