Description

Classic Comfort Loaded Potato Meatloaf is the ultimate fusion of two family favorites: juicy meatloaf and creamy loaded mashed potatoes. This hearty recipe is perfect for weeknights, potlucks, or holiday dinners. Packed with cheddar, bacon, and green onions, this potato-stuffed meatloaf brings flavor and comfort in every slice.


Ingredients

1.5 lbs ground beef

1 cup breadcrumbs

2 eggs

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon salt

0.5 teaspoon black pepper

2 cups mashed potatoes

1 cup shredded cheddar cheese

0.5 cup cooked bacon, chopped

0.25 cup green onions, chopped

2 tablespoons butter


Instructions

1. In a large bowl, mix ground beef, breadcrumbs, eggs, Worcestershire sauce, garlic powder, salt, and pepper until just combined.

2. Line a loaf pan with parchment paper or grease it. Press two-thirds of the meat mixture into the bottom and up the sides to form a shell.

3. In another bowl, mix mashed potatoes with cheddar, bacon, green onions, and butter. Spoon the mixture into the meat shell evenly.

4. Cover with the remaining meat mixture and seal the edges.

5. Bake at 375°F for 45 to 55 minutes until the meat is cooked through.

6. Let rest for 10 minutes before slicing. Garnish with extra cheese or green onions if desired.

Notes

Do not overmix the meat to keep the texture tender.

Leftover mashed potatoes work great if they’re thick and flavorful.

Line the loaf pan with parchment for easy removal and clean slicing.
