Ingredients
3 pounds sweet potatoes
2 cups heavy cream
1/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons butter
Instructions
1. Peel the sweet potatoes and slice them thinly using a mandoline or sharp knife.
2. In a saucepan, warm the heavy cream with brown sugar, cinnamon, nutmeg, and salt until the sugar dissolves.
3. In a greased baking dish, layer the sweet potato slices in overlapping rows.
4. Pour the warm spiced cream mixture over the sweet potatoes evenly.
5. Dot the top with butter pieces and cover the dish with foil.
6. Bake at 375°F for 30 minutes covered, then remove foil and bake for another 20–25 minutes until golden and tender.
7. Let rest for 10 minutes before serving.
Notes
Letting the dish rest after baking helps it set and slice cleanly.
Use Garnet or Jewel sweet potatoes for best texture and flavor.
