Ingredients
3 pounds beef chuck roast
2 tablespoons olive oil
2 large yellow onions, sliced
4 cloves garlic, minced
2 cups apple cider
2 cups beef broth
2 apples, sliced (Honeycrisp or Fuji)
1 teaspoon salt
1/2 teaspoon black pepper
4 sprigs fresh thyme
2 bay leaves
Instructions
1. Pat the beef dry and season all sides with salt and pepper.
2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef until golden on all sides, then remove and set aside.
3. In the same pot, add onions and cook until softened and caramelized, about 10-15 minutes. Add garlic and cook 1-2 minutes.
4. Pour in the apple cider and deglaze the pan, scraping up browned bits. Let it reduce slightly.
5. Add the apples, thyme, bay leaves, and return the beef to the pot. Pour in the beef broth to cover two-thirds of the roast.
6. Cover and transfer to a 325°F oven. Braise for 3 hours or until beef is fork-tender.
7. Remove bay leaves and thyme sprigs before serving. Spoon sauce over slices of beef.
