Ingredients
1 box yellow cake mix
8 oz cream cheese, softened
1/2 cup unsalted butter, melted
1 large egg
1 tsp vanilla extract
1 cup powdered sugar (for coating)
Instructions
1. In a large bowl, beat softened cream cheese and melted butter until smooth.
2. Add the egg and vanilla extract, and mix until combined.
3. Slowly add in the cake mix and stir until no dry spots remain. The dough will be sticky.
4. Cover the bowl and refrigerate the dough for at least 1 hour.
5. Preheat oven to 350°F and line baking sheets with parchment paper.
6. Roll tablespoon-sized portions of dough into balls.
7. Coat each ball thoroughly in powdered sugar.
8. Place balls on the baking sheet, spacing them 2 inches apart.
9. Bake for 10–12 minutes or until puffed and edges are just set.
10. Cool on the baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
Notes
Use softened cream cheese for smooth mixing.
Don’t skip chilling the dough—it makes shaping easier.
Cookies will continue to set as they cool, so avoid overbaking.
