Description

This Chocolate Raspberry Tart recipe combines a rich chocolate ganache, buttery tart crust, and fresh raspberries into an elegant dessert. Perfect for special occasions, this chocolate tart with raspberries is simple yet impressive.


Ingredients

1 1/4 cups all-purpose flour

1/4 cup granulated sugar

1/4 teaspoon salt

1/2 cup unsalted butter chilled and cubed

24 tablespoons ice water

8 ounces dark chocolate chopped

1 cup heavy cream

1/2 teaspoon vanilla extract (optional)

1 1/2 cups fresh raspberries


Instructions

1. Mix flour, sugar, and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Add ice water and form dough.

2. Press dough into a tart pan covering sides evenly. Chill for 30 minutes.

3. Bake crust at 375°F (190°C) for 20–25 minutes until golden. Cool completely.

4. Chop dark chocolate and place in heatproof bowl. Heat cream to simmer, pour over chocolate, and let sit. Stir until smooth. Add vanilla if using.

5. Pour ganache into cooled crust and spread evenly. Rest 10 minutes.

6. Arrange fresh raspberries on top. Gently press them into ganache.

7. Chill tart in fridge for 1–2 hours to set. Bring to room temp slightly before slicing.

Notes

This tart can be made a day ahead and kept refrigerated.

Use good-quality chocolate for best flavor and texture.

You can substitute blackberries or strawberries if preferred.
