Ingredients
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1 cup creamy peanut butter
4 cups crispy chow mein noodles
1 teaspoon vanilla extract
1 pinch salt
Instructions
1. In a large microwave-safe bowl, combine the chocolate chips, butterscotch chips, and peanut butter.
2. Microwave in 30-second intervals, stirring each time, until fully melted and smooth.
3. Stir in vanilla extract and salt until well incorporated.
4. Add chow mein noodles and gently fold them into the mixture to coat evenly.
5. Drop spoonfuls onto a parchment-lined baking sheet and shape into haystacks.
6. Refrigerate for at least 1 hour or until fully set and firm.
Notes
Use creamy peanut butter for smooth texture, but crunchy works too.
Don’t overheat the chocolate or it may seize—melt slowly.
These freeze well for up to three months in airtight containers.
