Description

This chimichurri steak skewers recipe is a bold, fresh grilling favorite made with juicy marinated steak, vibrant chimichurri sauce, and easy prep. Perfect for BBQ nights, healthy dinners, or flavorful meal prep, these grilled steak skewers are packed with herbs and garlic for an unforgettable dish.


Ingredients

1.5 pounds steak, cut into cubes

1 cup fresh parsley, chopped

1/2 cup fresh cilantro, chopped

4 cloves garlic

2 tablespoons red wine vinegar

1/2 cup olive oil

1/2 teaspoon red pepper flakes

1 teaspoon salt

1/2 teaspoon black pepper

8 skewers (wooden or metal)


Instructions

1. In a food processor, blend parsley, cilantro, garlic, vinegar, oil, red pepper flakes, salt, and pepper until chunky.

2. Cut steak into 1.5-inch cubes and marinate in half the chimichurri sauce for 30 minutes to 4 hours.

3. Soak wooden skewers in water if using.

4. Thread steak cubes onto skewers, spacing slightly.

5. Preheat grill to medium-high and grill skewers for 3-4 minutes per side.

6. Rest steak for a few minutes off the grill.

7. Drizzle with remaining chimichurri and serve warm.

Notes

Resting the meat after grilling helps juices redistribute.

Use metal skewers for ease and no soaking.

Double the chimichurri and save extra for dipping or salads.
