Ingredients

4 boneless skinless chicken thighs

3 tablespoons olive oil

4 garlic cloves, minced

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups cooked rice

1/3 cup mayonnaise

1 tablespoon lemon juice


Instructions

1. Combine olive oil, minced garlic, salt, pepper, and a tablespoon of chimichurri in a bowl. Add chicken thighs, coat well, and marinate for at least 30 minutes.

2. Make the chimichurri: Mix parsley, cilantro, garlic, olive oil, red wine vinegar, oregano, crushed red pepper flakes, salt, and pepper. Let rest.

3. In another bowl, whisk mayonnaise, lemon juice, and garlic until smooth. Chill until serving.

4. Preheat grill or grill pan to medium-high. Cook chicken 6-7 minutes per side until fully cooked and charred.

5. Assemble bowls with rice, sliced grilled chicken, chimichurri, and garlic sauce. Add optional toppings like avocado or roasted veggies if desired.
