Ingredients
1 lb chicken breast or thighs
2 tbsp butter
3 garlic cloves, minced
1 tsp chili flakes
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 cup heavy cream
1 cup sweet corn kernels
2 oz cream cheese
1/2 cup grated parmesan cheese
1 tbsp Cajun seasoning
8 oz pasta twists (fusilli or rotini)
1 tbsp olive oil
1 tbsp chopped parsley or chives
Instructions
1. Season the chicken with salt, pepper, and paprika.
2. Heat olive oil in a skillet and sear the chicken until golden and cooked through. Remove and set aside.
3. In the same skillet, melt butter, then add garlic and chili flakes. Sauté until fragrant.
4. Return the chicken to the skillet and coat with the garlic chili butter.
5. Cook the pasta according to package directions. Reserve 1/2 cup of pasta water, then drain.
6. In a saucepan, mix heavy cream, cream cheese, and Cajun seasoning. Stir until smooth.
7. Add corn and parmesan to the sauce and let it simmer until thickened.
8. Combine the drained pasta with the sauce, adding pasta water as needed.
9. Serve topped with the garlic butter chicken bites and garnish with parsley or chives.
Notes
Use chicken thighs for a juicier result.
Adjust chili flakes for more or less heat.
Fresh or frozen corn both work beautifully.
