Ingredients
3 medium zucchini
2 cups cooked shredded chicken
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Slice zucchini thin and lay on paper towels. Sprinkle with salt and let sit 10 minutes. Pat dry.
2. Preheat oven to 375°F and grease a casserole dish.
3. In a large bowl, mix chicken, sour cream, cheddar, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
4. In the baking dish, layer zucchini slices and chicken mixture, repeating and ending with cheese on top.
5. Bake for 30 to 35 minutes until golden and bubbly.
6. Let rest 5–10 minutes before serving.
