Ingredients
2 cups cooked chicken breast, chopped
1 cup seedless grapes, halved
1 cup apples, diced
1 cup celery, sliced
1/2 cup walnuts, toasted and chopped
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Cook and cool the chicken, then chop into bite-sized pieces.
2. Prepare grapes, apples, and celery by cutting them into consistent small sizes.
3. Toast the walnuts in a skillet, let cool, then roughly chop.
4. In a separate bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.
5. Combine chicken, fruits, celery, and walnuts in a large bowl. Add dressing and toss gently until well coated.
6. Chill in the fridge for at least 30 minutes to let flavors meld.
7. Serve on lettuce cups, bread, or with crackers as desired.
