Ingredients
2 chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 garlic cloves, minced
2 tablespoons unsalted butter
2 tablespoons lemon juice
2 cups chicken broth
1 cup white rice
1/2 cup parmesan cheese, grated
1 tablespoon chopped parsley (optional)
Instructions
1. Season chicken breasts with salt and pepper.
2. In a skillet, heat olive oil over medium-high and sear chicken on both sides until golden, about 4-5 minutes per side. Remove and set aside.
3. Lower heat to medium, melt butter in the same pan, and stir in garlic. Cook until fragrant.
4. Add lemon juice and chicken broth, scraping the pan to deglaze. Stir in rice.
5. Bring to a simmer, cover, and cook for 18-20 minutes until rice is tender.
6. Stir in parmesan cheese until creamy.
7. Return chicken to the pan, cover, and let sit for 3-5 minutes.
