Description

Chicken Scampi with Creamy Garlic Parmesan Rice is a comforting and flavorful one-pan meal featuring juicy seared chicken, creamy Parmesan-infused garlic rice, and bright notes of lemon. A cozy yet elevated dish perfect for dinner or meal prep.


Ingredients

2 chicken breasts

2 tablespoons olive oil

4 garlic cloves, minced

2 tablespoons unsalted butter

2 tablespoons fresh lemon juice

2 cups chicken broth

1 cup freshly grated Parmesan cheese

1 cup heavy cream

1 cup white rice

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh chopped parsley


Instructions

1. Slice chicken breasts thinly and season with salt and pepper. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove and set aside.

2. Melt butter in the same skillet and sauté garlic until fragrant.

3. Deglaze the pan with lemon juice and chicken broth, scraping up browned bits. Let simmer for a couple of minutes.

4. Stir in the rice and additional broth if needed. Cover and cook until the rice is tender.

5. Once rice is cooked, stir in heavy cream and Parmesan. Simmer until the mixture is creamy.

6. Return chicken to the skillet and cook a few more minutes until everything is heated through.

7. Garnish with fresh parsley and additional Parmesan before serving.

Notes

Add a splash of broth or milk when reheating to keep the rice creamy.

For extra tang, add a bit more lemon juice to the sauce before serving.

Use chicken thighs instead of breasts for a juicier variation.
