Ingredients
2 cups cooked chicken
3 tablespoons butter
1/3 cup all-purpose flour
1 3/4 cups chicken broth
1/2 cup heavy cream
1 cup diced carrots
1 cup peas
1/2 cup chopped celery
1 small onion, diced
1 teaspoon salt
1/2 teaspoon black pepper
2 pie crusts or puff pastry sheets
Instructions
1. Melt butter in a large skillet over medium heat. Add diced onion, carrots, and celery. Sauté until tender, about 5–7 minutes.
2. Sprinkle flour over vegetables and cook, stirring, for 2 minutes to form a roux.
3. Gradually whisk in chicken broth, then stir in heavy cream. Simmer until thickened, about 5–7 minutes.
4. Stir in the cooked chicken and peas. Season with salt and pepper. Cook until heated through.
5. Preheat oven to 400°F. Place bottom crust in a greased pie dish. Pour filling over. Cover with the top crust, seal edges, and cut slits in the top.
6. Bake for 30–35 minutes until golden brown. Cool 10 minutes before slicing.
Notes
Use rotisserie chicken for ease.
Cover edges with foil if crust browns too fast.
