Description

These Chicken Piccata Meatballs are a flavorful twist on the classic chicken piccata, made with tender ground chicken meatballs simmered in a zesty lemon butter sauce with capers. Ingredients

1 lb ground chicken

1/2 cup breadcrumbs

1 egg

2 cloves garlic, minced

1 tsp lemon zest

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

2 tbsp butter

2 cloves garlic, minced (for sauce)

1/3 cup white wine

1/2 cup chicken broth

1/4 cup lemon juice

2 tbsp capers

2 tbsp chopped fresh parsley


Instructions

1. In a mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, lemon zest, salt, and pepper. Mix until just combined.

2. Shape the mixture into 1.5-inch meatballs.

3. Heat olive oil in a skillet over medium heat and brown meatballs on all sides. Remove and set aside.

4. In the same skillet, melt butter and sauté garlic until fragrant.

5. Add white wine and let it reduce slightly.

6. Stir in chicken broth, lemon juice, and capers. Bring to a gentle simmer.

7. Return meatballs to the skillet and simmer for about 10 minutes or until cooked through.

8. Spoon sauce over the meatballs as they cook.

9. Garnish with chopped parsley and serve warm.

Notes

Use ground turkey as an alternative for chicken.

Don’t overmix the meatball mixture to keep them tender.

Serve with pasta, rice, or crusty bread for a complete meal.
