Ingredients
4 chicken breasts
8 tablespoons unsalted butter, softened
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
Vegetable oil, for frying
Instructions
1. In a small bowl, mix softened butter with garlic and parsley. Shape into a log, wrap in plastic, and freeze 30 minutes.
2. Pound chicken breasts to 1/4 inch thickness between parchment sheets.
3. Season chicken with salt and pepper. Place a piece of chilled butter in center and roll tightly, folding sides in.
4. Dredge each roll in flour, then beaten egg, then breadcrumbs.
5. Chill breaded rolls in freezer for 30 minutes.
6. Fry in oil over medium heat, 3–4 minutes per side, then transfer to 375°F oven for 10–15 minutes.
7. Serve hot and enjoy the buttery center.
