Description

A comforting Chicken and Pearl Couscous Soup packed with tender chicken, hearty vegetables, and chewy pearl couscous. Perfect for chilly nights or a nourishing meal any day. This healthy chicken soup recipe is light yet filling and freezer-friendly.


Ingredients

2 tablespoons olive oil

1 yellow onion, diced

2 carrots, peeled and chopped

2 stalks celery, chopped

3 cloves garlic, minced

8 cups chicken broth

2 cups cooked chicken, shredded

1 cup pearl couscous

1 bay leaf

1 teaspoon fresh thyme leaves

Salt and pepper to taste

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 6-8 minutes until softened.

2. Stir in minced garlic and cook for 1 more minute until fragrant.

3. Pour in chicken broth, then add bay leaf and thyme. Bring to a boil.

4. Add pearl couscous and reduce heat. Simmer for 10 minutes until couscous is tender.

5. Stir in the cooked chicken and simmer for 2-3 minutes until heated through.

6. Season with salt and pepper to taste.

7. Remove bay leaf and stir in fresh parsley.

8. Serve hot, optionally with bread or salad on the side.

Notes

Use rotisserie chicken to save time and add more flavor.

Add spinach or kale at the end for extra greens.

For a zesty lift, finish with a squeeze of lemon juice before serving.
