Ingredients
2 cups cooked chicken breast or thighs, chopped
2 cups sliced fresh mushrooms
3 cloves garlic, minced
1 small onion, diced
1 cup heavy cream
4 ounces cream cheese
1 cup shredded mozzarella cheese
0.5 cup grated Parmesan cheese
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon thyme
0.5 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Heat olive oil and butter in a large skillet over medium heat. Add onion and cook until softened.
2. Add garlic and mushrooms, cook until mushrooms are browned and have released moisture.
3. Reduce heat and stir in cream cheese until melted and smooth.
4. Pour in heavy cream, add thyme, salt, and pepper. Simmer until slightly thickened.
5. Stir in the cooked chicken, half of the mozzarella, and all of the Parmesan. Combine well.
6. Transfer the mixture to a greased baking dish.
7. Top with the remaining mozzarella cheese.
8. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbly.
9. Let cool for a few minutes before serving.
Notes
Use cremini mushrooms for deeper flavor.
Add spinach or peas for extra color and nutrition.
Swap cream cheese for a dairy-free version if needed.
