Ingredients
1 pound fettuccine pasta
2 boneless skinless chicken breasts
4 tablespoons butter
2 cups heavy cream
1 cup freshly grated Parmesan cheese
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Season chicken with salt and pepper.
2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear chicken on both sides until golden and cooked through. Remove and let rest.
3. In a large pot, boil salted water and cook fettuccine until al dente. Drain and reserve 1 cup of pasta water.
4. In the same skillet, melt remaining 2 tablespoons butter. Add garlic and sautée for 1 minute.
5. Stir in heavy cream and bring to a gentle simmer.
6. Add Parmesan cheese, whisking until smooth. If too thick, add reserved pasta water a little at a time.
7. Slice chicken and return to the skillet. Add cooked pasta and toss to coat evenly in the sauce.
8. Serve hot, garnished with chopped parsley if using.
