Description

Creamy, tangy, and topped with sweet cherries, these Cherry Cheesecake Bars are the perfect dessert for any occasion. This easy cheesecake bar recipe features a buttery graham cracker crust, rich cream cheese layer, and cherry pie topping. Ideal for holidays, potlucks, or a sweet treat anytime.


Ingredients

2 cups graham cracker crumbs

1⁄2 cup unsalted butter, melted

1⁄4 cup granulated sugar (for crust)

16 oz cream cheese, softened

1⁄2 cup sour cream

1⁄2 cup granulated sugar (for filling)

1 teaspoon vanilla extract

2 large eggs

1 can cherry pie filling (about 21 oz)


Instructions

1. Preheat oven to 325°F and line a 9×13-inch pan with parchment paper.

2. Combine graham cracker crumbs, melted butter, and 1⁄4 cup sugar in a bowl. Press into pan evenly and bake for 10 minutes.

3. In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix until fully combined.

4. Add eggs one at a time, mixing just until combined. Do not overmix.

5. Pour cheesecake mixture over cooled crust. Bake for 35 minutes or until the center is just set.

6. Let cool to room temperature, then refrigerate for at least 3 hours.

7. Spread cherry pie filling on top before slicing into bars.

8. Serve chilled and enjoy.

Notes

Keep the cheesecake bars refrigerated until ready to serve for the best texture.

You can freeze the bars (without the cherry topping) for up to 2 months.

To slice cleanly, wipe the knife between each cut.
