Ingredients
2 cups graham cracker crumbs
1/2 cup melted butter
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
8 oz whipped topping
21 oz cherry pie filling
Instructions
1. Crush graham crackers into fine crumbs and mix with melted butter. Press into the bottom of a 9×13-inch baking dish and refrigerate while preparing the filling.
2. In a bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla, then mix until fully incorporated.
3. Gently fold in whipped topping to keep the filling light and fluffy.
4. Spread cream cheese mixture over the chilled crust evenly.
5. Spoon cherry pie filling on top, spreading it out in an even layer.
6. Cover and refrigerate for at least 4 hours or overnight for best texture.
7. Cut into squares or scoop into dessert cups and serve chilled.
Notes
Use fresh cherries cooked with sugar and cornstarch as an alternative to pie filling.
Chill the dessert overnight for best texture and flavor.
Crust can also be made with vanilla wafers or crushed shortbread.
