Ingredients
1 lb twisted pasta (rotini or fusilli)
1 lb chicken breast or thighs, cut into bite-size pieces
2 cups Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1 cup heavy cream
4 garlic cloves, minced
2 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
Instructions
1. Boil a large pot of salted water and cook the twisted pasta until al dente. Drain and set aside.
2. Season the chicken pieces with salt, pepper, and Italian seasoning.
3. Heat olive oil in a skillet over medium heat and sear the chicken until golden and fully cooked. Remove and set aside.
4. In the same skillet, melt butter and sauté minced garlic until fragrant, about 1 minute.
5. Pour in the heavy cream and bring to a simmer. Stir in Velveeta cheese cubes and whisk until fully melted.
6. Add shredded mozzarella and stir until the sauce is smooth and creamy.
7. Return the cooked chicken to the skillet and toss in the pasta. Stir until everything is evenly coated.
8. Serve hot, garnished with extra mozzarella or parsley if desired.
