Ingredients
2 pounds russet potatoes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 packet taco seasoning
1/4 cup water
2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup salsa
2 tablespoons chopped green onions or cilantro
Instructions
1. Preheat oven to 400°F. Wash and cube the potatoes into bite sized pieces.
2. Toss potatoes with olive oil, salt, and black pepper. Spread evenly on a baking sheet.
3. Roast for 30 to 35 minutes, flipping halfway, until golden and crispy.
4. While potatoes cook, brown ground beef in a skillet over medium heat. Drain excess grease.
5. Stir in taco seasoning and water. Simmer 3 to 5 minutes until thickened.
6. Remove potatoes from oven and top evenly with taco meat.
7. Sprinkle shredded cheddar cheese over the top.
8. Return to oven for 5 to 7 minutes until cheese is melted and bubbly.
9. Remove from oven and top with sour cream, salsa, and chopped green onions or cilantro. Serve warm.
Notes
For extra crispiness, spread the potatoes in a single layer without overcrowding the pan.
You can substitute ground turkey or chicken for a lighter version.
Add jalapenos or pepper jack cheese if you prefer more heat.
