Description

Cheesy Sausage & Rice is a comforting one-skillet dinner made with smoked sausage, fluffy rice, sautéed veggies, cheddar cheese, and a creamy finish. Ingredients

1 tablespoon olive oil

14 ounces smoked sausage, sliced

1 medium yellow onion, diced

1 red bell pepper, chopped

1 green bell pepper, chopped

2 cloves garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1 cup shredded sharp cheddar cheese

1/3 cup heavy cream

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large skillet over medium heat. Add the sausage slices and cook until browned.

2. Add the diced onion and bell peppers. Sauté until softened, about 4 to 5 minutes.

3. Stir in the minced garlic and cook for another minute.

4. Add the rice to the skillet and stir to coat with the sausage and vegetable mixture.

5. Pour in the chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes or until rice is cooked through and liquid is mostly absorbed.

6. Stir in the shredded cheddar cheese and heavy cream. Mix well until everything is melted and creamy.

7. Season with salt and pepper to taste. Let the dish sit for a few minutes to thicken before serving.

Notes

Use a nonstick skillet to avoid rice sticking.

For extra flavor, use spicy sausage.
