Ingredients

12 oz rotini pasta

2 large chicken breasts

3 garlic cloves, minced

1 cup grated parmesan cheese

1 cup heavy cream

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella cheese

1 tablespoon chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the rotini according to package directions. Drain and reserve 1 cup of pasta water.

2. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil and sear chicken until golden and fully cooked, about 5-7 minutes per side. Remove and slice.

3. In the same skillet, melt butter and add minced garlic. Cook until fragrant, about 1 minute.

4. Stir in heavy cream and bring to a gentle simmer. Add parmesan and mozzarella, stirring until smooth and melted.

5. Toss in cooked rotini. Add reserved pasta water a little at a time if the sauce is too thick.

6. Return sliced chicken to the skillet and stir to combine. Garnish with parsley if desired and serve hot.

Use fresh parmesan for the smoothest, richest sauce.

Don’t skip reserving pasta water—it helps adjust the sauce’s thickness.
