Ingredients
1 pound rotini pasta
1 pound ground beef
4 cloves garlic, minced
4 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1/2 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
1 cup heavy cream
2 tablespoons chopped fresh parsley
Instructions
1. Boil a large pot of salted water and cook the rotini until al dente. Drain and set aside.
2. In a large skillet over medium-high heat, cook the ground beef until browned. Season with salt and pepper. Remove and set aside.
3. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Add red pepper flakes if desired.
4. Return ground beef to skillet. Pour in heavy cream and let it simmer for 3-5 minutes. Stir in Parmesan until melted and smooth.
5. Add cooked rotini to the skillet and toss gently to coat with the sauce. Stir in mozzarella until melted.
6. Garnish with parsley and serve hot. Top with extra Parmesan or cracked black pepper if desired.
Notes
Use freshly minced garlic for the most flavor.
Don’t overcook the pasta—al dente is best for holding sauce.
Stir the mozzarella in off heat to prevent clumping.
