Ingredients
1 lb ground beef
1 packet taco seasoning
1 small onion, diced
1 cup black beans
1 cup corn kernels
1 cup salsa
5 cups thick tortilla chips
2 cups shredded cheddar cheese
1/2 cup sour cream (for topping)
1/4 cup chopped green onions (for garnish)
Instructions
1. Brown the ground beef in a skillet over medium heat until fully cooked.
2. Add the diced onion and cook until softened, about 3–4 minutes.
3. Stir in taco seasoning with a splash of water and simmer for 2 minutes.
4. In a 9×13-inch baking dish, layer half the tortilla chips.
5. Top with half the beef mixture, half the black beans, corn, salsa, and cheese.
6. Repeat the layering one more time with the remaining ingredients.
7. Bake at 375°F for 20 minutes until the cheese is melted and bubbly.
8. Broil for 2–3 minutes for a crisp top, if desired.
9. Let cool slightly, then top with sour cream and green onions before serving.
Notes
This casserole is best served fresh but stores beautifully for up to 3 days.
Use thick-cut tortilla chips to avoid sogginess after baking.
