This Cheesy Meatball Rice Casserole is a family-friendly comfort food favorite made with juicy meatballs, creamy mushroom sauce, fluffy rice, and melted cheese. Perfect for weeknight dinners, meal prep, or potlucks, it’s easy, cheesy, and delicious.
Ingredients
3 cups cooked rice
20 fully cooked meatballs
1 can cream of mushroom soup (10.5 oz)
1 cup milk
1 ½ cups shredded cheddar cheese
¼ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Preheat your oven to 375°F.
2. In a large mixing bowl, combine cooked rice, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix well.
3. Spread the mixture evenly in a greased 9×13-inch baking dish.
4. Place the meatballs on top of the rice and press them in slightly.
5. Sprinkle cheddar and Parmesan cheese evenly over the top.
6. Cover with foil and bake for 25 minutes.
7. Remove the foil and bake for another 10–15 minutes until bubbly and golden.
8. Let it rest for 5 minutes, garnish with parsley, and serve warm.
Notes
Make sure meatballs are fully cooked before baking.
Use freshly cooked or leftover rice—just make sure it isn’t too wet.
You can mix in veggies like spinach or peas for added nutrition.
