This Cheesy Garlic Butter Spaghetti with Italian Sausage & Spinach recipe is a flavorful, comforting one-pot pasta meal. Ingredients
16 oz spaghetti
1 lb Italian sausage (mild or hot)
4 cloves garlic, minced
4 tbsp butter
4 cups fresh spinach
1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and reserve 1 cup of pasta water.
2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into pieces. Set aside.
3. In the same skillet, add butter and garlic. Sauté until fragrant and lightly golden, about 1-2 minutes.
4. Add spinach and stir until just wilted.
5. Return sausage to the skillet. Add cooked spaghetti and a splash of pasta water. Toss well.
6. Stir in parmesan and mozzarella until melted and creamy.
7. Season with salt, pepper, and red pepper flakes. Serve hot with extra cheese if desired.
Notes
Use freshly grated cheese for the best melt and flavor.
Reserve pasta water to help create a smooth, emulsified sauce.
Don’t overcook the spinach — a quick wilt is all it needs.
