Description

Ingredients

12 oz rigatoni pasta

1.5 lbs chicken breast or thighs

1 tsp salt

1/2 tsp black pepper

4 cloves garlic, minced

4 tbsp butter

2 tbsp olive oil

1.5 cups heavy cream

3/4 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

4 oz cream cheese

1 tsp Italian seasoning

2 tbsp chopped fresh parsley


Instructions

1. Boil salted water and cook rigatoni until al dente, then drain.

2. Season chicken with salt, pepper, and Italian seasoning. Sear in butter and oil until golden and cooked through. Slice.

3. In the same pan, sauté garlic in butter. Add heavy cream and let simmer, then stir in cream cheese and Parmesan until smooth.

4. Mix cooked rigatoni and chicken into the Alfredo sauce and toss to coat.

5. Transfer to a baking dish, top with mozzarella, and bake at 375°F until bubbly and golden, about 15–20 minutes.

6. Garnish with fresh parsley and serve hot.

Notes

Let the pasta rest for 5 minutes before serving.

Use freshly grated cheese for best melt and flavor.
