Description

This Cheesy Beef Broccoli and Rice is the ultimate one-skillet comfort food, loaded with ground beef, melted cheddar, fluffy rice, and crisp-tender broccoli. Perfect for busy weeknights, meal prep, or cozy dinners, it’s a creamy, satisfying dish everyone will love.


Ingredients

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

3 cups cooked white or brown rice

2 cups shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced

2 tbsp butter

1 tsp salt

½ tsp black pepper

½ cup milk


Instructions

1. Melt butter in a large skillet over medium heat. Add diced onion and minced garlic, and cook until soft and fragrant.

2. Add ground beef to the skillet and cook until browned and no longer pink. Season with salt and pepper.

3. Steam fresh broccoli until tender-crisp or thaw and drain frozen broccoli.

4. Stir in the cooked rice and broccoli into the skillet with beef. Add the milk and stir to heat through.

5. Add shredded cheddar cheese and stir until fully melted and the mixture is creamy.

6. Taste and adjust seasoning if needed. Serve hot.

Notes

This dish reheats well and is great for meal prep.

You can substitute brown rice for added fiber and texture.

Add red pepper flakes or hot sauce if you like a spicy kick.
