Ingredients
300g twisted pasta (rotini or fusilli)
2 chicken breasts or thighs
3 tablespoons salted butter
4 garlic cloves, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil
Instructions
1. Boil a pot of salted water and cook the twisted pasta until al dente. Drain and set aside, reserving some pasta water.
2. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet and sear chicken until golden and cooked through. Slice into strips and set aside.
3. In the same skillet, melt butter and sauté minced garlic until fragrant and slightly golden.
4. Pour in the heavy cream and stir. Add Parmesan and mozzarella gradually, stirring until sauce thickens.
5. Toss in the cooked pasta and mix to coat. Return chicken to skillet, stir gently, and serve hot with extra cheese or herbs.
