Ingredients
4 boneless skinless chicken breasts, halved into cutlets
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 cup all purpose flour
2 large eggs
1 tablespoon water
1 1/2 cups Italian seasoned breadcrumbs
3/4 cup grated Romano cheese
1/2 cup grated Parmesan cheese
1/3 cup olive oil
2 tablespoons butter
12 ounces angel hair pasta
3 tablespoons butter
1/4 cup chicken broth
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1/4 cup extra Romano cheese for serving
Instructions
1. Place the chicken cutlets between sheets of plastic wrap and pound them to an even thickness. Season both sides with salt, black pepper, and garlic powder.
2. Set up three shallow bowls with flour in the first, eggs beaten with water in the second, and breadcrumbs mixed with Romano and Parmesan in the third.
3. Dredge each chicken cutlet in flour, dip it into the egg mixture, then press it into the breadcrumb and cheese mixture until evenly coated.
4. Heat the olive oil and 2 tablespoons butter in a large skillet over medium heat. Cook the chicken for 4 to 5 minutes per side until golden brown and cooked through, then transfer to a plate.
5. Cook the angel hair pasta according to package directions, then drain.
6. In a large skillet or saucepan, melt the remaining 3 tablespoons butter with the chicken broth and lemon juice.
7. Add the cooked angel hair pasta and toss gently until coated and glossy.
8. Divide the pasta among plates, top with the crispy chicken, and finish with parsley and extra Romano cheese before serving.
Notes
Pounding the chicken to an even thickness helps it cook quickly and keeps the crust from browning too fast before the center is done.
Freshly grated Romano gives the coating the best bold flavor and melts more smoothly into the breadcrumb mixture.
For the crispiest leftovers, reheat the chicken in the oven or air fryer instead of the microwave.
