Ingredients
1 pound ground beef
2 cups elbow macaroni
1 small yellow onion, diced
2 cloves garlic, minced
2 tablespoons tomato paste
3 cups beef broth
1 ½ cups shredded cheddar cheese
4 ounces cream cheese
1 tablespoon Dijon mustard
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Heat a large skillet over medium heat and brown the ground beef, breaking it apart as it cooks, for about 5-6 minutes. Drain any excess fat.
2. Add the diced onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute.
3. Mix in the tomato paste and Dijon mustard, stirring until well combined.
4. Pour in the beef broth and bring to a simmer. Stir in the elbow macaroni and reduce heat to low. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
5. Add the cream cheese and stir until melted and smooth. Then stir in the shredded cheddar cheese until fully melted and creamy.
6. Season with salt and black pepper to taste. Serve hot with optional toppings like pickles or more cheese.
