Ingredients
2 pounds ground beef
1 cup breadcrumbs
2 large eggs
1 cup shredded cheddar cheese
1 small onion, finely diced
1/4 cup ketchup (plus more for topping)
1 tablespoon yellow mustard
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F. Grease a loaf pan or line it with parchment paper.
2. In a large bowl, mix together ground beef, breadcrumbs, eggs, cheddar cheese, onion, ketchup, mustard, garlic powder, salt, and pepper until just combined.
3. Press the meat mixture into the prepared loaf pan. Smooth the top and spread additional ketchup over it for the glaze.
4. Bake uncovered for 50–60 minutes, or until the internal temperature reaches 160°F.
5. Let the meatloaf rest for 10 minutes before slicing and serving.
