Description

Creamy and comforting Cheddar Garlic Herb Potato Soup is a perfect fall or winter dinner. Made with Yukon Gold potatoes, cheddar cheese, garlic, and fresh herbs, this easy soup recipe is hearty, cheesy, and full of flavor. Ideal for meal prep, weeknight meals, or cozy gatherings.


Ingredients

2 tablespoons olive oil

2 tablespoons butter

1 medium onion, chopped

4 garlic cloves, minced

2 tablespoons flour

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

4 cups Yukon Gold potatoes, peeled and diced

4 cups chicken or vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

Salt, to taste

Black pepper, to taste

Chopped chives or bacon bits for garnish (optional)


Instructions

1. In a large soup pot, heat olive oil and butter over medium heat. Add chopped onion and garlic, and sauté until soft and fragrant.

2. Stir in the flour and cook for one minute, then add chopped thyme and parsley.

3. Pour in the broth and add diced potatoes. Simmer for 15–20 minutes until potatoes are tender.

4. Blend part of the soup using an immersion blender for a creamier texture, or leave it chunky if preferred.

5. Reduce heat, add heavy cream, and stir in cheddar cheese until fully melted. Season with salt and pepper to taste.

6. Serve hot, garnished with chives or bacon bits.

Notes

Use Yukon Gold potatoes for the creamiest texture.

If reheating, do so slowly over low heat to prevent separation.

Customize with add-ins like bacon, kale, or hot sauce for variety.
